"Lemon" Squash Pie
1 cup grated raw squash
1 1/2 cup sugar
1 Tbsp. flour
3 eggs
2 Tbsp. lemon extract
Dash of salt
1/2 stick butter
1 baked pie shells
Grate only the yellow part of squash. Beat eggs well. Add sugar, rounded tablespoon flour and melted butter to eggs. Beat until thick and lemon colored. Add salt and lemon extract. Add grated squash and stir well. Pour into 2 baked pie shells and bake at 375 for 40-45 minutes.
Put foil around edge of pie crust so it doesn't burn. Just before pie is done, remove foil. Tastes like lemon pie - Good!/p>
