Slow Food Piedmont Recipes

    Beet & Apple Salad

    2 raw beets, grated
    2 apples, grated
    2 tbs olive oil
    1 tsp honey
    2 tsp lemon juice

    Mix all in a bowl, tossing to coat thoroughly.


    This was Laurie Pickeral's potluck dish at the Levering Orchard picnic June 11, 2006. "The apples & beets were organic, but not local. However, the honey was a gift, and I was told it came from Pleasant Garden, NC."
